1. PANCAKES OF MANIOC FLOUR SIMPLE

A simple recipe, without gluten and without lactose to try for a breakfast full of energy.

– Ingredients –

  • 1 cup of cassava flour
  • 2 tablespoons of sugar coconut
  • 2 teaspoons of baking powder without gluten
  • 1/2 teaspoon salt
  • 1 + 1/4 cup vegetable drink
  • 2 tablespoons of coconut oil (or melted butter)
  • 1 egg

– Mode of preparation –

  1. Mix all the dry ingredients in a container.
  2. Mix the liquid ingredients in another container.
  3. Add the liquids to the dry, incorporating them, without hitting too.
  4. Let the dough rest about 30 minutes (or for at least 10 minutes).
  5. Bring a nonstick pan to the heat down slightly greased with coconut oil.
  6. Go placing portions of dough in the frying pan and let it cook for about 2 minutes or until it forms little balls.
  7. Turn the pancakes and cook the other side until golden brown.

2. PANCAKES OF MANIOC FLOUR AND HONEY

This option is similar to the first, but instead of the sugar of coconut you use honey, and instead of the vegetable drink uses-if lactose-free milk.

– Ingredients –

  • 1 cup of cassava flour
  • 1 egg
  • 2 tablespoons of honey
  • 2 teaspoons of baking powder
  • 1 + 1/4 cup of milk without lactose
  • 2 tablespoons vegetable oil melted
  • 1 pinch of salt

– Mode of preparation –

  1. Mix the cassava flour, the salt and the yeast in a bowl.
  2. Mix the egg, honey, milk and butter in another container.
  3. Add the liquid ingredients to the cup of flour and incorporate.
  4. Place portions of dough on a non-stick pan, lightly greased with butter or coconut oil, and let cook for about 2 minutes.
  5. Turn the pancakes and let cook the other side until golden brown.

3. PANCAKES OF MANIOC FLOUR, BANANA, OATS AND CHIA

For pancakes, more elaborate, take advantage of the nutritional qualities of the banana, oats and chia.

– Ingredients –

  • 1 banana ripe
  • 40 g of cassava flour
  • 65 g of oat flakes
  • 1 tablespoon of chia seeds
  • 1 tablespoon vinegar cider
  • 1/2 teaspoon of sodium bicarbonate
  • Coconut oil q. b.

– Mode of preparation –

  1. Grind the chia seeds and add two tablespoons of water. Mix and set aside.
  2. Grind the rolled oats until you get flour.
  3. Crush the banana with a fork. Add the vinegar, baking soda and chia seeds. Add the flour and half a cup of water and mix.
  4. Brush a frying pan with coconut oil. Join a tablespoon of dough and flatten with the spoon or a spatula. Let brown on one side and turn to brown on the other. Repeat until finish the dough.

4. PANCAKES OF MANIOC FLOUR WITH KEFIR, CARDAMOM, AND MACA

In addition to get pancakes, gluten-free and cute, this suggestion will still take advantage of the nutritional qualities of cardamom, of litter and of kefir, a probiotic of high nutritional value and therapeutic.

– Ingredients –

  • 1 cup of cassava flour
  • ¼ Teaspoon ground cardamom
  • 1 teaspoon of maca
  • 1 teaspoon baking soda
  • 1 teaspoon of baking powder
  • ½ Cup of water
  • 1 cup kefir plain
  • 2 eggs
  • ¼ Cup of melted coconut oil, plus extra for cooking
  • 2 tablespoons of sugar coconut

– Mode of preparation –

  1. Mix the first five ingredients in a small bowl.
  2. Mix the remaining ingredients in a large bowl, stirring well to incorporate.
  3. Join slowly the mixture of dry ingredients to the ingredients moist, mixing evenly.
  4. Heat 1 teaspoon of coconut oil in a nonstick pan over medium high.
  5. Add ¼ cup of dough at a time, cooking the pancakes for 2 minutes or more on each side.
  6. Continue cooking pancakes until all the batter has been used, adding more coconut oil as needed.
